Zucchini Quiche

4 cups of unpeeled and thinly sliced zucchini ½ cup of chopped onions ¼ teaspoon of parsley ¼ teaspoon of oregano ¼ teaspoon of pepper ¼ teaspoon of butter salted 6 well-beaten eggs 1 teaspoon of fresh lemon juice 1/8 cup of nonfat dry milk Fat-free cooking spray

Here’s a recipe for a fabulous, yet healthy, zucchini quiche your family and friends will be glad you brought to the party.


Coat a large skillet with fat-free cooking spray. Cook the zucchini, onions, herbs and spices over medium heat for 10 minutes. Coat a 10-inch glass pie pan with fat-free cooking spray. Beat the eggs with dry milk. Combine with the cooked vegetables and bake in the oven for 15 minutes at 375°.
