DIETARY EXCHANGES

  1. Heat oil in large skillet over medium-high heat. Add turkey, onion and ginger. Cook 7 minutes, breaking meat up with back of spoon. Add water chestnuts and soy sauce. Cook 3 minutes or until meat is browned and no longer pink. Remove from heat; stir in cilantro.
  2. Spoon 1/4 cup meat mixture into lettuce leaf. Add optional toppings; roll up.
